Pillsbury Vineyard sits in the Willcox AVA in the Sulphur Springs Valley of southeastern Arizona, at about 4,300 feet in the high desert. Founded by Sam Pillsbury — a Willcox wine pioneer who planted Rhône varieties (and Chardonnay) when the region was still an unlikely bet — the site is known for sandy loam soils, big day/night temperature swings, and fruit that holds aroma and natural acidity. Farming leans organic in practice: soils fed with compost and gypsum, weeds handled by hand and machine instead of herbicides, vines treated with only organic sprays, and cover between the rows mowed so nutrients return to the ground. Pillsbury continues to grow and sell fruit from the estate. We source here for Cactus Cru because the farming is careful and the Willcox fruit tastes like place.
