VINIFICATION The Fiano grapes were hand picked with the help of friends and transported to Arizona Stronghold in Camp Verde, Arizona for vinification. The grapes were destemmed and fermented with native yeasts on the skins for 14 days with several punch downs a day before being pressed off at dryness into a neutral oak barrel and several kegs. The wine was aged sur lie for 10 months with no bâtonnage. Racked once before bottling. Unfined, unfiltered with 20 PPM of added SO2 (5 PPM when the grapes arrived at the winery, 15PPM a week before bottling).
EXPRESSION From five thousand feet up at the foothills of the Chiricahua Mountains, this skin-contact Fiano glows golden with a whisper of haze. Aromas hit with ripe apricot, fresh pineapple, and a touch of chamomile florals, all woven with subtle orange peel zest. On the palate, it’s textured yet bright, tangy apricot jam, honeyed nuts, and a zingy, saline finish that lingers. Pure desert sun in a bottle, balanced and unforgettable.
